There are certain fields on the form that are visible in the email when the form is submitted. Once the form is downloaded in PDF form there are certain fields that are no longer visible.

Are you referring to the PDF document or a copy of the submission as PDF? If so, you can add the missing fields from the "Add Element" tab.
Or, simply create a new PDF document and see if all details or information is included in the downloaded PDF document using the new document.

Thank you for getting back to me.
So I am referring to when a client submits the new client form. We get an
email with the form in the body of the email and then a PDF attachment. In
the body of the email, you can see all of the answers but when you download
the PDF version there are some answers missing off the PDF.

You can follow the guide that my colleague provided.
After that, just make sure that you select the correct PDF document in the Email notification advanced settings and click the Save button.
