I have tried to change the e-mail of the person submissions should be sent to email@example.com However, whenever I do a test, it always reverts back to firstname.lastname@example.org I'm not sure what I'm doing wrong.

Are you just using the TEST button to check your form? If yes, submission would be automatically sent to account email address not on your form's recipient address. If you want to check your form if your form's notification work, I would suggest you to test your form on actual submission.
I have made some test submission in your form. Can you please confirm if your received the submission that I've made?
