Hi, I have loads of 'simple invoice' tabs open in my pdf editor... firstly why?? and how do I stop that form happening and get rid of them.

That's because you've created all of them. Kindly note that when you create a PDF document/form, it gets saved, and you don't need to create another one. Also, if you need to apply any changes or updates to it, you can easily do it as well with no issues at all.
In order to delete a PDF document/form in the PDF editor, please follow the steps in my screenshot below:

so why are they all simple invoices?. I only have forms on here... no invoices?.

You can rename the Simple Invoices to what you want. You can also delete it.
