When using the edit-link in the mail confirmation, the customer can edit his subscription and edit fields.
But will there be a way for the administrator of the site to see in the report when (date/time) or which field(s) the customer has changed?

Unfortunately, no. There is not a way to see those details in your report. The submissions should reflect the changes made but will not specifically highlight those changes for you to see. As for the time, you will be sent an email alert for each submission edit, so you can refer to that email for the time when the edit is made.

Please note that if you have your submissions integrate with Dropbox; the pdf DOES NOT get updated when the submission is edited. I have already reported this as a bug; however, the support team seems to think this is a feature rather than a bug. Just warning.
