This problem just started occuring. Normally the email notification shows the two email addresses but this last submission has the gibberish instead. My client, who is concerned with spamming, would like to know what is happening with it. Thanks,

I tested your form https://www.jotform.com/form/3482641943 email notification, but I could not reproduce the issue on the email To field in the email header
Please provide us more details that we can check.
Perhaps your email client is causing this? In my screenshot above, I used gmail client.
A screenshot of the issue or your email header details that have this issue should help us check further.
