How about using these widgets to list your items?

You can set a limit on each item using those widgets.

Please give it a try and let us know if that could work for your needs.

You can actually add a conditional logic that will allow you to create an order limit.
Just add calculation field and set the submit button to hide if the amount of order exceeded your preference.

I hope that helps, please let me know should you need further assistance.

I have moved your new concern to a new ticket considering it is about another topic.

We will respond to that ticket shortly. Please refer to that ticket if you have any follow-up questions about syncing orders to your Google Sheets.
