No matter how many times I enter a different email in settings it always reverts to my signin email address. Why?
I want to use my Gmail address of markpw51@gmail.com

Have you tried following the steps similar to this guide?

Here basically the Recipient Email field from Notifier Email Setting is changed by adding a newer one and crossing out the older one as shown below.
