Also, on mobile I want a button that says "Next" that is clear to the user. "1 of 8 >" isnt clear to all people and negatively impacts my advert.

If I understand correctly, when using the form on mobile browser, you wanted the navigation link/button "1 of 8 >" to replaced by a "NEXT" button instead.
Can you please confirm first that this is how you meant.

This is the default design for the Card Form layout. If you will use the Classic form layout instead, it is possible to add NEXT button accordingly.
