I am receiving two notification emails, each time my form is submitted. One is the one I set the form up to send, and the other is from "JotForm". Can we eliminate the one from "JotForm"?
PS - the website is currently in testing phase

That is becaused you have created 2 notification alerts which is sending to same recipient email address. You can remove the unwanted notification alert.
