I included a ticket price which became the subtotal, and a processing fee. those two items became the total. I want to be able to discount all the costs associated with the transaction using the coupon code, but it only allows me to discount the subtotal on the settings.
Please advise.

I noticed that you've renamed text of the "Tax" field to "Processing Fee".As you've already discovered, the discount coupons can only be applied to product, shipping and subtotal values; so, it is not possible to discount all the costs associated with the transaction using the coupon code.
However, you can achieve your requirement with the "user defined option" payment type. This option allows you to apply your own calculations when billing a client. You'll find all the information on implementing this in this article: how-to-pass-a-calculation-to-a-payment-field
