i want to Freeze Particular Item for Particular Date

Do you want to disable a time slot /date after it has been selected on the appointment field? Is that what you are referring to?

If yes, you can limit the appointment using the field option below in the field's properties:

This will disable that date/time once selected.

I have created form where two Options available per day selection.
If any who is filling the form if they selecting particular option for that day.. so that no other can refill that particular option for that particular day

The suggested solution of my colleague should work for your requirement. There's no more need to have more than 1 appointment fields on a single form, just limit the Maximum Appointment per day.
