We have a paid plan, so there is not any jot form branding on the form, but I noticed that when a user receives an autoresponder email, if they view the email on gmail for mobile, there is a jotform logo. How can I change that to a different logo?

That's due to the Sender Email as noreply@jotform.com which is our default sender. You may want to add a custom sender email in your form, we highly recommend the SMTP method.

You can also set up the SMTP through your Account - Settings page.
