You can create a PDF document of the submission and attach it to the email notification (that you'll receive) and the autoresponder email (that your users will receive).
However, you should an email field to the form. In that way, the form will know where to send the autoresponder.

As you can see, I have removed the FULL NAME, ADDRESS, and EMAIL fields into the PDF document, so only the texts and the signature will be shown.
