Can you please just tell me what each of these fields 'means' on your email alert "reply-to" and "recipient" settings:
Sender Name: [the sender of WHAT? The person who filled out the form or ...? This offers me a drop-down list of the fields in my form but seems to have no relation to the “Sender E-Mail” drop-down list]
Sender Email: [again, the sender of what? Is this the person who filled out the form?]
Reply-to email: [Who is that? The person I'll be replying to if I hit 'reply' when I get the form (i.e. the person who filled out the form and filled out the email field)? Or the person they'll see as the reply to (i.e. me) if I reply back to them)?
Recipient Email: The person who will get the notification whenever someone fills out that form?
This has become a huge problem for me. I use the jot form as an "Ask a Question" form for an online course, and I need to be able to just hit 'reply' to the email notification and answer the person who filled out the form.
But lately when I hit "reply" to the notification I get, it appears (in my email client, Outlook), that I'm sending to the name of the person who filled out the form -- but later I find out my email was sent to the email@example.com email address.
I’ve read 2 tutorial pages about this and watched 3 videos and I’m still confused. Is there just a diagram somewhere that points to each of the fields in the notification and explains exactly what it is in plain English words?

Here are the answer you are looking for:
Sender Name: This is the name which is displayed when someone receive the submission email. When you set it to one of your form question and user input "Ashwin D" and submit the form, you (Recipient) will receive email from "Ashwin D <firstname.lastname@example.org>"
Sender Email: This is the email address which is displayed when someone receive the submission email. When you set it to "email@example.com" or custom sender and form is submitted, you (Recipient) will receive email from "Ashwin D <firstname.lastname@example.org>"
Reply-to Email: If you set "Sender Name" and "Sender Email" as I have mentioned above but set the "Reply-to Email" as "email@example.com", you (Recipient) will receive email from "Ashwin D <firstname.lastname@example.org>" only. But when you hit reply to that email, you will see that email is being sent to "email@example.com"
Recipient Email: You can input any email address in this field. Whenever form is submitted, submission emails will be sent to this email address.
