Phone numbers suddenly change to non-existing numbers with non-existing area codes. For example a phone number field shows area code (569). That is not a US area code!!!

Are you referring to the phone numbers that were submitted on your form? To my understanding, your respondents entered a correct phone number when they submitted your form, but those phone numbers were suddenly updated on the submissions page of your form to a non-existing number with a non-US area code, is that correct? May we ask that you provide us the submission ID(s) of the submission that shows the issue you are describing, please? Submission data are supposed to be stored in your account exactly the same as when it was submitted unless the submission were edited/updated, which is possible on the new JotForm Tables.
