Hi there,
this might be an odd question but...
I'm trying to create a beautiful fillable form like you have here that works on pc and on mobile etc but I don't want to collect the data. Essentially I'm creating a kind of self appraisal and so the only person that needs the information will be the person that entered it. I don't want to collect or store any data submitted, instead I'd like the person who filled it in to be able to download/recieve their submission for their own records. Is that possible with Jotform? To set it up in a way that means I don't recieve the info?
I had a look at the settings but I wasn't sure.

Hello Rachel,
This is absolutely possible.
By default, you are notified when someone submits a form.
If you go to Settings > Email instead of a blank screen like shown below, you will see something called a Notification.
This is the thing sending you an email when someone submits the form.
You can delete it, and replace it with an Autoresponder, which will send a copy of the submission to the person who filled the form.
