I would like to know how to change the email address the notification gets sent to when someone submits a form. Right now, it always goes to my default email address.

To change the email address which is used to receive submission emails, you need to change the "Recipient Email" address of your form's notification alert.

Please be informed that clicking on "Test Email" button of your form's notification alert will always send test emails to your registered/account email address.
