The current Google Spreadsheet support creates a new file everytime a submission is made. I would love to see it work the way google spreadsheets shines: realtime editing on a single file.

As I have tested my own Google spreadsheet integration, the data are being synced together with the old one whenever there is a new submission. Here's the Google Spreadsheet of my form, you can see the different dates of the submissions of the form.
Please test several submission and integration.

i just tested it, and it creates a new spreadsheet for every submission. Every newest spreadsheet does contain all previous submissions, which is good, but i would prefer that it just edits that same spreadsheet throughout so there isn't a hundred spreasheets, each one larger than the previous, at the end of the month.

could you provide us the name or link to the form in question, in order to try recreating this issue, meanwhile could you try by removing the integration and then make it again.
In order to remove your integration follow the next steps:
From your form builder:
Click on "Setup & Embed"
1. Click on Integrations
2. Select the Google Spreadsheet integration.
3. Click on "Remove Integration"
Integrate your form again:
