Creating Invoice

I am trying to create a list of invoiceable items (services and inventory) with pre-set pricing. Then ideally when creating an invoice, I can chose from the list, and have the other items not appear on the pdf when created. Is this how the invoicing templates work? Can client info be saved to pre-populate the fields?

I am not sure if understand how exactly you would like to prepopulate the data but the invoices/PDF are generated based on the data of the person that submits the form.

You can edit generated PDF file and the invoices from the PDF editor, to make sure it contains the information that you require.

I am trying to use a form to invoice/receipt at point of sale, in client's home. I collect payment at time of visit the vast majority of time. Not sure if I need an invoice or payment template. If I have for example 50 items in my products lists, but am only charging for 3, I would not want to have to delete the other 47 items (but would not want them showing up either).

Only the selected products appear on the invoice. I will try to explain with my example form below.

Let's say we have created an order form using the Product List Element that includes two different products.

Also, we have enabled the Invoice option.

When someone fills your form and select a product, only the selected product appears on the Invoice. Here is my screencast below:
