We have a form that is being used to sign up for a vaccine waitlist. If someone responds to the email they get after completing the form, I get it in my email inbox. Is there a way to prevent them from replying to that email? Or a way to stop those emails from going into my inbox?

Could you please confirm if you are using your own email address in the "sender" field in the Auto-Responder emails? What is listed under the Sender Email on the form in question?
