Can I have the google spreadsheet creat a new 'sheet' depending on the submissions.
I really like the google drive application because this allows me to then share the document with different people. However if it could divide the info onto different sheets this would be fantastic.

There is no quick feature to achieve this. However, a work around you can work on is to create different forms with google integration for each form (different spreadsheet), and link them to the one form (original form) and create a radio button or drop-down field with conditions to which form it will redirect.
Then for each form, you will integrate with google spreadsheet so their submission will depend on their chosen option. And different spreadsheet.
