I'm looking for a widget for dropdown selection, that when one person choses option 1 it will no longer be available. Only remaining options will show up. similar to a date or scheduling selection, that the time is unavailable.

And is it possible to pull the options from a google spreadsheet or something similar

You can may try the asmSelect widget which disables option after it's selected
