I currently do not have a date field in my survey, but it is automatically captured under Submission Date by JotForm.
I want to add this "Submission Date" field in Email Notification "Email Subject", but this field does NOT appear under "Form Fields".
Any suggestions how to get this without having to add a Date field in the survey that users have to enter manually? (I am ok with a hidden field that can auto-populate based on submission date)

Yes, you can add a date in the notification emails without adding a date field in the form. You can use {DATE} in the email notification. We have a related guide available as well on the link below.
