How do I disable payment on the form

How do I disable payment? I would like to receive orders but not receive payment. Many of my clients are cash.

If you wish to only collect order information, without the payment, you need to switch your payment method from PayPal to Purchase order. You can do this from the Payments tab in Add Form Elements panel:
