Hi
Where can I edit the message the user sees when the inventory reaches the quota?
I understand that the form will automatically become disabled once quota is reached

To clarify: which message are you wanting to edit?
Are you wanting to edit the None available message that appears in the Inventory Widget:

Let me rephrase the question :)
A few days ago I received this answer from your support:
*Unfortunately, it is not possible to disable the form based on a specific
field.However, as a workaround, you could use either the Ticket Purchases
or the Inventory
widget.With the widgets, you
can restrict the total amount, and once the tickets have ended, the users
cannot submit the form anymore. You can set the tickets or the products to
be whatever you like, and you do not necessarily have to set a price on
them.*
My question is: by saying that the users cannot submit the form anymore, do
you just mean that no more items or "tickets" will be available for
selection, or that the form becomes disable? like the option to disable the
form based on a date etc.

The form will not be disabled, but the field will be disabled.
If you mark the field as required, then once the inventory runs out, you will not be able to submit the form.
Another approach is to use conditions to Hide the submit button if the Inventory widget is empty (i.e all items used up and the widget is disabled):
