In the last 6 months there has been a change in the way that jotforms is integrated with dropbox and the files that are uploaded are now coming into my dropbox with a random long number string instead of the persons name, like it did in the past. Makes it very hard to match the file to the person.

The Dropbox integration feature had a rendition recently. It maybe the reason for the disconnection of your form's dropbox folder mapping.
You can checked the warning message about the changes in the dropbox integration manager
As suggested you should try refreshing the integration by removing the integration and re-integratethis time using the new process in the Form Builder
