Once the user submits the form, their payments will also be processed the right way and once it is successful, you'll receive their payments in the payment gateway you used almost in an instant. If you want to charge them at a later date, you can enable Payment Authorization in the payment settings.
Note that the payment field doesn't support stock limits so you will have to monitor your orders manually. But you can use this workaround if you want a product with stock limits. This requires using widgets with stock limit features rather than the built-in products in the payment field. The downside is that these widgets do not have multiple quantities and product options unlike the built-in products in the payment field.
