If you're using the payment field, you can always edit your products and disable the product you want manually so they will not be shown in your form.

Here's an example:

With regards to the sizes, you will have to edit the Size option and delete the size manually. I understand this would really be a painful task especially when you restock because you will have to go back and forth to restore the products and sizes but right now, I don't see any other alternative except this workaround https://www.jotform.com/help/426-how-to-setup-a-payment-order-form-with-limited-stocks as mentioned in your other ticket.
