Our auto responder to let us know that we've received a submission shows from "JotForm" and not the "full name" as we have specified. This just started happneing earlier in the week.

The reason why the sender shows as "Jotform" is because your notification mail sender email is set to "email@example.com".
Your email client associates that email address to the address book entry named "Jotform" that is why it displays as such.
To prevent this from happening, configure the sender email to use the email address submitted by the user.
