You can add a DateTime field in your form and set its default values to ON.
In the form's notification e-mail, you can then include the DateTime field in the e-mail's message body. So, everytime you recieved the e-mail message upon the form's submission, you will now know the date/time the form was submitted by the user.
If you do not want the DateTime field to appear in the form, you can inject CSS codes to hide it.

There is a hidden Date/Time field into this form which was hidden by this CSS code
To test the form, only the e-mail field is required and you can submit.
