I tried to change the defult email address from my address to another, but i'm still geting emails when i test it. Don't have it up on the server yet, but how do i change that?

I assume that you are just using "Test Email" button found on notification wizard to test your form, right? If so, when testing email notification, you have to submit an actual submissions with your form in order to see if the notifications are being sent correctly or not. Clicking only "Test Email" button found on the notification wizard will ONLY send emails to the email address that is associated to your Jotform account (the Primary email address).
