Yes, but this is not correct answer I am waiting :)
imagine, that there are multiple registrations to the same 10 AM time, and
in every registration register 1 participant. Time is available until 5th
participant is registered. Then Time 10 AM must be disabled.

The Group option will do exactly that. It will allow 5 users to select a 10 AM slot and it will disable it after.

This is a form to register participants to events, which occur in listed
times. One person may register multiple participants by specifying the
value in the field "Number of participants". For example, person A
registers 5 participants at 10 AM, and after that choice 10 AM must be
disabled, because 5 is the max number of participants.
Person B registers 2 participants at 12AM, 12 AM choice stays enabled,
because at this time 3 more participants can be registered.
Person C registers 3 participants at 12 AM, total number of participants is
5, then time 12 AM must be disabled.
How can I count how many participants have been registered for a certain
period of time ?

Unfortunately, no, that is not possible with the Appointment field.

You can use the Quantity Gift Registry to book multiple slots for the same time:

However, not that this is not in a calendar format. You will have to list out all your available time slots for this.
