Yes, Zoho has been used a lot, and it should work just fine.
That depends on what type of list you've integrated your form. It's either, leads, contacts or accounts.

I think I'm going to struggle with Zoho as I cant see how you remane the fields to accept all the information I'm trying to collect from the form
Do you have a basic crm at jotform?
Best way to work the fields out would be to match the fields you already contain on your CRM and then created them on your form.

A direct JotForm function to work with the data can be achieved with reports, such as the Excel Report. By exporting the data to excel you can then import the data to given database if needed.
