No matter how many times i update my email to say - email@example.com, the test emails and notifications emails always go to 'firstname.lastname@example.org,' which is clearly an invalid email.
How do i make sure it send to my correct email, ending in '.com' not '.co,'

That usually happens when account email address is wrong under Account Profile page.
It seems that you do not have registered account with us, so I would like to recommend you to sign up for a Free account. Your form is supposed to be automatically transferred from your current Guest account to the new registered account.
