Hidden Items vs. Importing Field

We are trying to create a Form that would be filled out by 2 parties. The first is customer information and the 2nd exam notes form a veterinarian. If all the veterinarian fields are hidden from the customer and the customer submits that portion of the form, would the veterinarian be able to see the hidden fields easily when they get the forms. Or would it just make more sense to figure out Import Fields?
