Can you allow for the form to be emailed and have the email come from the customer?
e.g. if john smith completes the form, the form will be emailed from John.smith@hotmail.com, rather than from e.g. form@jotform.com
We want to integrate this with our helpdesk system Gorgias
we want to create web forms that capture information for (return request, request missing component, stockist request, etc)

Are you referring to the sender email in the notification email?
Unfortunately, you cannot use the submitter's email address here. You can either use JotForm default sender email or your own SMTP sender email.
You can rename the sender name to your custom one from the dropdown:
