You can correct that in your form notification. On the "Reply-to" field, set it to your email field so when you hit reply to your email, user's email will be populated on the reply to email field.
Click Setup & Embed > Email Alerts > Open Notification

Another alternative solution is to use Mandrill so the From Email option can be utilized.
