The amount of people that can use your form will all depend on what plan you're on. For example you're currently on the free plan. This plan gets 100 submissions a month, 10 payment submissions and 1000 form views. If you were to upgrade to Bronze, this gets bumped to 1000 submissions, 100 payment submissions, and 10,000 form views. When you assign people the form little avatars will appear above the invitation box. If you click on it, a box will pop up with all the assignees in it. You can then resend or see when the user submitted the form.

I believe the difference between quick share and assigned link are if you change your form to assignees only. If you do that then only the assignee link will work and the quick link will not.
