Now that I have my forms setup with your help, and the old data imported,
I want to clean it up. I saw that I can archive records, but cannot tell where they go
nor if I could retreive them if needed. I also see how to delete records, but I want to know if I could "import" those same records back into the database if I trim too much and someone wants the old data reloaded, is that possible, and if so, how?

You can archive the submissions and you can find them on the submission page. Here's a screenshot how to open the Archives page:

We recommend downloading the data before deleting it because we cannot restore deleted submissions.

Ok, what about part 2, I see you cannot restore deleted records, but is there a way to take a downloaded dataset and import or upload them, i.e. from an Excel file that was previously downloaded from Jotforms?

You can restore deleted form submission data that were deleted not more than 30 days ago or not completely deleted yet.
