We have a client who tells us they are not receiving any of the notifications from the forms we built for them -
Is there any means of testing / checking the routing - mail server logs for specific forms?
The address in question is: email@example.com

Upon checking, I found that email address firstname.lastname@example.org is in our bounce list for following reason:
email@example.com is IN the bounce list
Reason(s) : 5.3.0 - Other mail system problem 550-'5.7.1 Message rejected due to conten=
That may be the reason, your client must not be receiving the submission email. I have removed it from our bounce it and it should be working fine now. You need to take a closer look at the bounce reason and take corrective steps. Changing the subject line of the email template should actually help.
