I'm not receiving forms that are being filled out. I feel like I may have missed some important emails.
Also, how can I add additional email addresses to receive the forms?

It seems like you do not have an account yet, and your forms were created under guest accounts. I'd suggest signing up for a JotForm account (it's free!) to you can easily manage your forms and change their settings.
