I have tried to change the setting so that empty fields are not included in the e-mail that i receive but it is not saving the change. So i'm still receiving the empty fields. I have deleted and recreated the notification e-mail leaving everything at the defaults. SO i'm not sure what i'm doing wrong.

Try it again this time, it should now work. For some reason, there is an "undefined" text shown on the "Hide Empty Fields on Emails" on your form settings which is not right. I have now corrected it and set it to "Enabled". Kindly test your form this time.
