What happens if my form exceeds the ammount of submissions in a given month? Will it stop sending them to my email and end up on my Jotform storage, Will I recieve nothing at all, will it throw an error message, or something else?

In this case your forms will be temporary blocked to the end users. In other words, you will not be able to receive new entries until the first day of the next month (the day when we reset the quota).
