Stripe authorize and charge later

I’m considering your service and want to understand if fits my requirement.

I have read here https://www.jotform.com/help/190-how-to-integrate-stripe-with-your-form/ ; assuming I set “charge customer immediately = no” could you explain what happens? Does allow me what described below?

My user case is the following:

1) customer buys through a form. At this time I would like to authorize credit card but not collect funds yet because I do not know how much shipping expense will be (customer is required to authorize a max shipping expense amount: the real amount could be lower)

2) in the moment I know exact shipping ecpense I want to finalize funds capture

I'm afraid that it is not possible to update the amount to be charged on the card. The funds need to be finalized for the payment authorization. Here is also a Stripe documentation snippet about this:
