Even though I have my email notification set to a specific email address, the emails are still sent to the email address in my Profile/General Information settings. I have tries several times but it doesn't seem to work.

I did check all your last edited forms and did not find any issue with them. None of them are set to send submission emails to your profile email address.
Are you clicking on "Test Email" button of your email alert? Please be noted that clicking on "Test Email" will always send test submissions to your account / profile email address. To test your notification alert you should actually click on "Preview" button of you form builder and click submit button of your form.
