Hi Kim I just love Jotform too,
it spares me a lot of time and
has a good designing tools
So lets begin
First go to the Setup&embed
then Email alerts
and finaly the Add New Email
You can click the notification email wich serves
for Users just to submit the content of the form to your email
But mach more better and user friendlier is to use Autoresponder Email because it notifies the users that their form has reached You !
click on the Autoresponder Email and in the popup Email wizard and click Next
then you enter your email and name : be advised that Jotform advices to select "firstname.lastname@example.org" as the Sender Email to ensure that the auto-response is not identified by the recipient's email provider as a spam!
but you can enter you - clearly visible email.
and here you can edit the autoresponder text and make a autoresponder template look as you wish.
Hope I have helped a bit,
take your time and browse trough Jotform templates and widgets,
it`s very rewarding service!

Thanks for getting back to me. I'm very familiar with the process you've
highlighted but I don't see how I can achieve I need, perhaps I didn't
explain it clearly enough.

On how I understand your concern is that you want setup an Autoresponder email where you can send an email to whatever email is captured in your form's email field. If that is correct the steps provided by Damir is exaclty what you need to do to achieve your goal.
If this is not what you want to do can you please explain further on what you are trying to achieve? Kindly check this guides that might be related to your questions.
