I do not know what the star and other symbols are used for on form. Also, how many emails can you send to alert and how do you set up emails for alerts. Please reply to firstname.lastname@example.org

They are for you to use them as rating tools which are more commonly used in surveys where people qualify/rate some service or other things.
In that Dropdown area you can find all the tools and fields you can add to your form. You can find a quich overview about those features at this guide: Quick Overview of form fields It is a bit outdated, but it will help you to understand more how our features and fields work. Regarding to email alerts. You can send as many notifications as you wish after someone submits your form. You can learn how to create email Notification and how to configure them here: Setting up Email Notifications
