I'm aware there's settings to change field text colour in a forms Setup & Embed>Preferences>Font Colour or Secondary Colour but the problem we have is that we are a charity helping many disabled persons with advice and information.
Therefore the current forms actual field entry labels are a grey colour and it doesn't seem like there's any current way to change this.
This means it's not very accessible especially to people with visual impairments and as you can appreciate, due to the nature of our charities services which we offer people, we need to be as accessible as possible.
Please see the attached image, I've highlighted the areas of text that's currently grey with the yellow highlighter to show you what we need to change.

You can actually use custom css to modify or change field's sub-label color. Inject this custom css in your form.
