We are installing a spam device which refuses all email to our server unless its on a white list. Is there any way to make all our forms appear as though they have been sent from a single address without affecting the contact details of the person who has filled in the form?

You can make all email notifications received by a single email address (email@example.com). Just go to your Email Notifications and click the Reply-To and Recipient Settings button to go to the view below. Then select firstname.lastname@example.org in the Sender E-mail field:
Don't forget to save the changes. In this way, you only need to whitelist one email address, that is email@example.com.
