What happens if i change a form field after the form has already received submissions?

I have a form where I use a dropbox field to limit options for that field. If I need to change the options on the field after the form is in use what impact will that have on my previous submissions?

e.g initial dropbox entry options

• Apples
• Banana
• Pear

Updated dropbox entry options

• Apple sorbet
• Banana Split
• Pear shake

What unforeseen effects could such changes have on my existing data?

On testing further, I have noticed that the previous submissions will remain intact. The existing submissions will be untouched when you update the stocks.
